Choc, chia & oats pudding

What ingredients do you need for 3 puddings?

  • 2 cups of steel cut oats
  • 1 cup of chia seeds
  • 1 cup of cacao powder
  • ½ cup of linseed
  • ½ cup of LSA mix (Linseed, Sunflower & Almond)
  • 1 tablespoon of carob powder
  • 1 tablespoon of cinnamon ground
  • 1 teaspoon of raw honey, coconut nectar or coconut spread.
  • 1 tablespoon of flaxseed oil
  • 1 tablespoon of cacao butter
  • Juice of a small lime
  • Pinch of Himalayan salt

What do I do now?

  • Soak the chia seeds in filtered water for at least 10 minutes. I usually soak them overnight.

I love the gelatinous texture of chia seeds when soaked

  • Cook the steel cut oats. Bring 3 cups of filtered water and the pinch of salt to a boil. Add the steel cut oats. Reduce heat to low and simmer. Cover and cook for approximately 15 minutes. Taste regularly so it is slightly chewy.
  • After removing from heat, let stand covered for a couple of minutes.
  • Add the rest of ingredients and stir until the mixture is homogenous.
  • Place the mixture in baking mould of your choice overnight in the fridge.

Cooking rings are so basic but so useful for raw cooking

  • You can decorate with goji berries, almonds or anything that makes you happy!

  • Enjoy!
