If you are looking for a sweet treat or a good breakfast to keep you full for a long time, this pudding will be perfect for you. I usually prepare it over night so it gives me a good reason to wake up in the morning!

Nutritional story of the day
- For this recipe, I chose organic whole grain steel-cut oats as they are milled from whole grain oats and cut into small pieces on a steel mill. They represent a good source of fibre and have an awesome texture for this type of pudding. They are very popular especially cooked in winter. In Traditional Chinese Medicine, oats are said to have a warming thermal nature and are suitable for all blood types. Whole oats are minimally processed and nutritious (only the outer hull is removed). - Chia seeds are a good source of fibre, antioxidants and omega 3. Once soaked, the chia get an amazing gelatinous texture.
This is supposed to be a ‘healthy treat’. I opted for good quality ingredients : organic when possible, whole and/or super foods. Nevertheless, this snack-breakfast-dessert-or-whatever-you-want-to-call-it is quite rich. You should eat a small portion as it is quite filling. Enjoy your healthy treat but remember that moderation is important.
Too much of something good is still too much…
